Summer truffle season – Tuber aestivum – starts in May and ends in mid-September. Also known as summer truffle, St. John’s truffle or white summer truffle.

Although its peridium is similar to that of the black truffle, its inner appearance is distinguished by its white color.

Summer truffles give off a fragrant scent of undergrowth, mushroom and hazelnut.

Our summer truffles come from France.

Freshness

Our fresh truffles are firm to the touch. They are clean and canifted (lightly cut into the flesh) to appreciate their quality.

Upon receipt, store your truffles in the fridge for one week.

Security

Shipments are tracked and sent at controlled temperatures. Our truffles are vacuum-packed in our laboratory before shipment.

Cooking tips

Summer truffles cannot be cooked, but they can be heated slightly. Add them at the end of a recipe (omelettes, fresh pasta, etc.).
