Cooking tips

Brown the contents of the Cevennes risotto in butter with a chopped white onion. Stir and cook for 3 minutes over medium heat, gradually adding the chicken stock with a glass of white wine (stock volume: 3 times the volume of the rice). At the end of cooking, add mascarpone and grated Parmesan.
