COOKING TIPS
- Brown the contents of the winter truffle risotto in butter with a chopped white onion.
- Stir and cook over medium heat for 30-40 minutes, gradually adding the chicken stock and a glass of white wine (stock volume: 3 times the volume of the rice).
- At the end of cooking, add butter and grated Parmesan.
